Hanging out at Whole Foods is always fun, but this past Tuesday night at the Ann Arbor-Cranbrook location was extra fun thanks to cheesemonger Carrie and her mad grilled cheese skills.

On the grilled cheese menu were three tasty options:
Le Gruyère Reserve from Emmi Roth – a nutty, spicy cheese which melts great and is commonly used in fondue. This was grilled in a mini raclette and paired with sweet, tart Bartlett pears.
Halloumi from Cyprus from G. & I. Keses – a combination of goat and sheep’s milk that takes the shape of the baskets in which it is made, this intense cheese actually does not melt at all! The salty cheese retains it’s shape and has a squeaky texture, but served with a drizzle of honey and it really pleased even the most discerning palate.
Berliner Der Käse from Emmi Roth – a Whole Foods exclusive with a creamy texture and nutty taste grilled up nicely onto some baguettes.

As I mentioned in yesterday’s post, coffee and cheese have been a favorite flavor fantasy formula since early childhood. It just seemed right that the nutty, sweet, bitter smells and tastes would fit perfectly together. I imagined they would, only I was still a kid and coffee had yet to become my morning nectar from the Gods. Two cheesemakers obviously felt the same.

Happy National Cheese Lovers Day! Last year, The Mouse was pleasantly surprised to discover that there was a holiday just for fromagephiles to pay homage to the blessed curd. A full twenty-four hours to bask in the glow of some Basque or any cheese of choice. Rosh Hashanah begins at sundown tonight and millions of Jews around the world will celebrate the coming of year 5771. The typical way to begin the high holidays is to have something sweet after services and then have a huge holiday feast, usually on the kosher side. For such family gatherings, it falls to me to bring the cheese. While I love my heritage and respect the traditions and laws, I have to say…I HATE parve cheese. Parve cheese is kosher-accepted cheese, sometimes made from soy rather to insure no animal rennet mixes with dairy, a big kosher no-no. I appreciate the effort, but the flavor of this kosher concoction is rather unpleasant and the texture is more like oil than cheese. So, what’s a good Jew to do? Fortunately, there are cheeses made with vegetable rennet and while they aren’t technically kosher, these cheeses are Rosh Hashanah friendly. Continue reading
Over the last few years I have come to love and appreciate goat’s milk cheese. From the nutty freshness of Garrotxa to the complex and beautiful Valencay. There are so many varieties of cheese made with goat’s milk and more coming to market all the time, I have no illusions of being able to taste them all. One type has become one of my favorites. For over two years, I have been on the hunt for my favorite cheese, Stinking Bishop. I badgered my cheesemongers, scoured the Internet and made several futile attempts to contact Neal’s Yard, all to no avail. Then I met Samantha, the cheese and charcuterie buyer for Cheese Plus in San Francisco, California. Well, actually I spoke with her on the phone, as I live across the country in the Midwest.
Cheese Plus is owned by Ray Bair, former director of cheese, wine, and specialty foods for Whole Foods Market. Ray opened his shop about five years ago, and it is touted as San Francisco’s premier cheese and specialty food source – no mean feat. Although they don’t have an official online storefront, anyone can call and request items shipped. Continue reading
On February 27th, Whole Foods stores world-wide attempted to break the Parmigiano Reggiano wheel cracking record set back in 2008. Did they do it? To be honest, I’m not sure yet. What I am sure of is this event was a major hit with staff and customers alike at the University Heights, Ohio location. One of the coolest things about cheese is that it unites all aspects of food as shown by the many tasting stations set up throughout the store. From wine and beer to dessert, this cheese let its versatility shine. Continue reading
